Ingredients
  

  • 2-2.5 lb chicken wings party wings or drums and flats
  • 1 tbsp aluminium-free baking powder
  • 1.5 tsp kosher salt divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika optional
  • 1-2 tbsp avocado or light olive oil
  • 1/3 cup white or apple cider vinegar
  • 2 tbsp malt vinegar powder optional, for extra punch

Method
 

  1. Pat the wings dry. Toss with the baking powder, 1 tsp salt, garlic powder, onion powder, pepper, paprika, and 1 tbsp oil.
  2. Preheat the air fryer to 390°F (200°C) for 3 to 5 minutes.
  3. Arrange in a single layer, not touching, and cook 22 to 26 minutes, flipping at 12 to 13, to 185 to 195°F.
  4. Toss the hot wings with the liquid vinegar, then dust with the malt vinegar powder and the remaining 1/2 tsp salt.

Notes

Vinegar after cooking, not before — a marinade steams the skin soft.
Malt vinegar powder is the trick for that chip-aisle tang without re-wetting the wings.
Serve with keto ranch or blue cheese.
