- Pat the wings dry. Toss with the baking powder, 1 tsp salt, garlic powder, onion powder, pepper, paprika, and 1 tbsp oil.
- Preheat the air fryer to 390°F (200°C) for 3 to 5 minutes.
- Arrange in a single layer, not touching, and cook 22 to 26 minutes, flipping at 12 to 13, to 185 to 195°F.
- Toss the hot wings with the liquid vinegar, then dust with the malt vinegar powder and the remaining 1/2 tsp salt.
Notes
Vinegar after cooking, not before — a marinade steams the skin soft.
Malt vinegar powder is the trick for that chip-aisle tang without re-wetting the wings.
Serve with keto ranch or blue cheese.
