Maple Smoked Bacon Chips

Thin bacon cut into squares, glazed lightly with maple, and baked low on a rack until it renders fully into crisp chips that stay snappy.

Ingredients
  

  • 8 oz thin-cut streaky bacon
  • 1 tbsp maple syrup or sugar-free maple syrup
  • 1/4 tsp smoked paprika
  • black pepper or cayenne a pinch, optional

  • Rimmed sheet pan

Method
 

  1. Heat the oven to 325°F. Set a wire rack over a foil-lined rimmed sheet.
  2. Cut the bacon into 1 to 1.5-inch squares and arrange on the rack without overlap.
  3. Brush lightly with the maple syrup mixed with the paprika, plus an optional pinch of pepper.
  4. Bake 18 to 24 minutes, rotating the pan at 12, until deep golden with small bubbles at the edges.
  5. Turn off the oven and leave the chips inside 3 to 5 minutes with the door cracked.

Notes

Go light on the glaze: too much syrup keeps the surface sticky and can burn bitter. Reduce it and bake 5 minutes longer if that happens.
Rack over a sheet lets the fat drip and the heat circulate so they render evenly.
