Lamb Kofta Skewers with Mint Yogurt

Ingredients
  

For the kofta
  • 1 lb ground lamb
  • 1/2 small onion grated and squeezed dry
  • 3 garlic cloves grated
  • 1/4 cup parsley finely chopped
  • 2 tbsp mint finely chopped
  • 1.5 tsp ground cumin
  • 1.5 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1.25 tsp kosher salt
  • 1/2 tsp black pepper
For the mint yogurt
  • 1 cup Greek yogurt
  • 2 tbsp mint chopped
  • 1 small garlic clove grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt a pinch

Equipment

  • Skewers
  • Broiler or air fryer
  • Small bowl

Method
 

  1. Knead the lamb with the onion, garlic, herbs, spices, salt, and pepper until tacky.
  2. With wet hands, press the mixture into thin, flat logs around skewers. Chill 15 minutes so they hold.
  3. Broil 6 to 8 inches from the element 4 minutes, flip, 3 to 4 minutes more; or air fry at 400°F for 8 to 10 minutes, turning once.
  4. Rest 3 minutes. Whisk the mint yogurt and serve alongside.

Notes

Squeeze the grated onion dry — wet onion makes the mixture slide off the skewer.
Wet hands and press it thin and flat so it cooks fast and evenly.
Chill the shaped skewers if the meat cracks or slips.
