Keto Steak Bites with Garlic Butter Mushrooms

Cubed sirloin seared hard in batches and tossed with browned mushrooms in a quick garlic butter, done in about 20 minutes.

Ingredients
  

  • 1-1.25 lb sirloin or ribeye cut into 1-inch cubes
  • 12 oz cremini mushrooms halved
  • 2 tbsp avocado or light olive oil divided
  • 3 tbsp butter
  • 3-4 garlic cloves minced
  • kosher salt and black pepper
  • 2 tbsp parsley chopped
  • 1/2 lemon

Method
 

  1. Heat a 12-inch skillet over medium-high with 1 tbsp oil. Add the mushrooms in a single layer and don't stir for 3 minutes. Stir once and cook 3 to 4 minutes more, then move to a bowl and salt lightly.
  2. Return the skillet to high heat with 1 tbsp oil. Pat the steak dry, season, and sear half at a time with space between the pieces, 1 to 1.5 minutes per side, to a rosy centre. Move to a plate.
  3. Lower to medium-low, add the butter and garlic, and stir 20 to 30 seconds, scraping up the browned bits.
  4. Return the mushrooms and steak with any juices. Toss 30 to 60 seconds, then finish with parsley and a squeeze of lemon.

Notes

Salt the mushrooms after browning, not before, or they weep.
Two batches for the steak — a crowded pan steams it grey.
Garlic in butter for 20 to 30 seconds only — it burns fast and turns bitter.
