Keto Air Fryer Sesame Ginger Chicken Breast

Chicken breast marinated in coconut aminos, sesame oil, ginger, and a keto sweetener for a takeout-style sweet-savoury glaze, air fried in under 20 minutes.

Ingredients
  

  • 2 large chicken breasts about 1.25 to 1.5 lb, butterflied or pounded even
  • 2 tbsp coconut aminos or tamari
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar unseasoned
  • 1-1.5 tbsp allulose or monk fruit blend
  • 1.5 tbsp fresh ginger grated
  • 2 garlic cloves minced
  • 1 tsp fish sauce optional
  • 1/2 tsp red pepper flakes optional
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • avocado oil spray
  • 1-2 tsp sesame seeds to finish
  • sliced scallions and lime wedges to serve

Method
 

  1. Whisk the coconut aminos, sesame oil, rice vinegar, sweetener, ginger, garlic, fish sauce, and pepper flakes. Toss with the chicken and marinate 15 to 30 minutes.
  2. Preheat the air fryer to 380°F (193°C) and spray the basket.
  3. Lay the chicken in a single layer, mist the tops, and cook 9 to 12 minutes, flipping at 6, to 160 to 165°F.
  4. Rest 5 minutes. Scatter sesame seeds and scallions and squeeze lime over.

Notes

Even thickness cooks evenly: butterfly or pound to 3/4 inch.
Pull at 160°F and let it carry to 165°F while resting.
Thighs work too and stay juicier — 10 to 12 minutes.
