Ingredients

  • 1-1.5 lb center-cut salmon skin removed, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 small garlic clove minced
  • 1 tsp Dijon mustard
  • kosher salt and black pepper
  • 3 tbsp fresh dill chopped, to finish
  • lemon wedges to serve

Equipment

  • Air fryer
  • Mixing bowl
  • Paper towels

Method

  1. Trim the thin tail section and cut the even portion into 1-inch cubes.
  2. Whisk the oil, lemon juice, zest, garlic, Dijon, salt, and pepper. Toss with the salmon for 10 minutes, no longer.
  3. Preheat the air fryer to 400°F (205°C).
  4. Arrange the cubes in a single layer and cook 8 to 10 minutes, shaking halfway, until the edges are golden.
  5. Toss with fresh dill and a squeeze of lemon.

Notes

Marinate 15 minutes max: more acid than that and the salmon turns chalky.
Even cubes: save the thin tail for another use so the bites cook at the same rate.
Don't crowd the basket or they steam.
