Ingredients
  

  • 2 lbs chicken wings party-style: flats and drumettes
  • 1 tbsp baking powder aluminum-free, for max crisp
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 0.5 tsp dried chives optional but tasty
  • 0.5 tsp smoked paprika optional, for color and depth
  • 2 tbsp avocado oil or light olive oil
  • 2 to 3 tbsp ranch seasoning sugar-free, store-bought or homemade

Method
 

  1. Pat the chicken wings thoroughly dry with paper towels. Moisture prevents crisping—don't skip this step.
  2. In a large bowl, combine baking powder, kosher salt, black pepper, garlic powder, onion powder, dried dill, dried parsley, dried chives, and smoked paprika. Mix well.
  3. Add the dried wings to the spice mixture and toss until every wing is evenly coated with the dry seasonings.
  4. Drizzle 2 tablespoons of avocado oil over the seasoned wings and toss again until lightly coated. You want a thin, even coat—not drenched.
  5. Preheat the air fryer to 390–400°F (200–205°C) for 3–5 minutes. Lightly oil the basket with a quick spray.
  6. Arrange the wings in a single layer in the basket with no overlap. Do not stack or crowd—cook in batches if necessary.
  7. Cook for 10–12 minutes, then flip the wings carefully.
  8. Cook for another 8–10 minutes until the skin is deeply golden and crispy, and the internal temperature reaches 185–190°F (85–88°C). You'll see bubbly, browned skin.
  9. Remove from the air fryer. While hot, sprinkle 2–3 tablespoons of ranch seasoning over the wings and toss to coat evenly. The seasoning adheres better when the wings are hot and slightly oily.
  10. Rest for 2–3 minutes. This allows the crust to set and the flavors to settle.
  11. Serve hot with ranch dip, blue cheese dressing, celery sticks, or cucumber slices.

Notes

Baking powder: Use aluminum-free baking powder only. It raises the pH of the wing skin, promoting browning and crisping without affecting taste. Standard baking powder can leave a metallic aftertaste.
Ranch seasoning timing: Add ranch seasoning after cooking, not before. If added early, it burns or slides off. Tossing while hot ensures better adhesion.
Crowding: Single layer only. Wings need airflow to crisp properly. Overlapping wings trap steam and create soggy skin. Cook in batches and keep finished wings warm at 200°F in a low oven while cooking remaining batches.
Internal temperature: Aim for 185–190°F internal temp. This ensures juicy meat and shatteringly crisp skin. Check the thickest part of a drumette or flat.
Homemade ranch seasoning: Mix 3 tbsp dried parsley, 2 tbsp dried dill, 2 tbsp dried chives, 2 tbsp garlic powder, 2 tbsp onion powder, 2 tsp kosher salt, and 1 tsp black pepper. Store in an airtight jar for up to 3 months.
Store-bought ranch: Many commercial ranch packets contain sugar or cornstarch. Check the label for 0–1g carbs per serving, or DIY to be certain.
Low-carb dipping sauces: Use a ranch or blue cheese dressing with 1–2g carbs per 2 tablespoons. Avoid sweet sauces. For heat, use hot sauce mixed with melted butter instead.
Flavor variations: Buffalo ranch (toss with melted butter + hot sauce), lemon pepper ranch (add lemon zest to seasoning), garlic Parmesan ranch (toss with melted butter + grated Parm).
Storage: Cool completely, then refrigerate in airtight container up to 4 days. Freeze in single layer for up to 2 months.
Reheating: Air fryer at 375°F for 4–6 minutes until hot and crisp. Avoid microwave to preserve texture.
