- Pat the wings bone-dry with paper towels. If you have time, salt them and chill uncovered on a rack 2 to 12 hours.
- Toss the wings with the oil, then the salt, pepper, garlic powder, and baking powder. Keep it a light, even dusting, not a cake.
- Preheat the air fryer to 390 to 400°F for 3 to 5 minutes.
- Arrange in a single layer, not touching. Cook 11 minutes, flip, then 9 minutes more, until deep golden and crisp (internal temp 185 to 195°F for fall-off-the-bone).
- Melt the butter and stir in the truffle salt, lemon zest, and pepper flakes. Toss the hot wings with the truffle butter and grated Parmesan, and finish with herbs.
Notes
Truffle is loud: start with the smaller amount, you can always add more.
Freshly grated Parmesan melts into a crisp, salty coat; pre-grated stays powdery.
Toss while the wings are hot so the butter and cheese cling.
