Ingredients
  

For the asparagus
  • 1 lb asparagus woody ends removed, patted dry
  • 8-10 slices bacon thin or regular cut
  • black pepper
For the garlic aioli
  • 1/2 cup mayonnaise
  • 1 garlic clove grated
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • 1 tsp water
  • salt a pinch

  • Sheet pan

Method
 

  1. Group 3 to 4 spears with the tips aligned. Anchor a slice of bacon below the tips and spiral it to the base with 1/4-inch overlaps, tucking the tail under.
  2. Set the bundles seam-side down on a wire rack over a sheet pan and grind pepper over.
  3. Bake at 400°F, 16 to 22 minutes depending on spear and bacon thickness, until the bacon is crisp. Finish under the broiler 1 to 2 minutes if needed.
  4. Whisk the aioli ingredients and let it sit 10 minutes to mellow before serving.

Notes

Dry spears — a wet tray after 10 minutes means the asparagus was damp.
Rack, not the pan, so the bacon crisps all the way around.
Remove enough woody base or the ends fray into strings.
