Crispy Air Fryer Edamame Pods with Wasabi Ranch

Whole edamame pods air fried from frozen until blistered and charred at the edges, eaten like fries and dunked in a wasabi ranch.

Ingredients
  

For the edamame
  • 1 lb frozen edamame in the pod not shelled
  • 1-1.5 tbsp neutral oil
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika optional
  • black pepper and lemon wedges
For the wasabi ranch
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup mayonnaise
  • 1-2 tsp wasabi paste
  • 1 tsp rice vinegar or lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp dill or chives chopped
  • salt and pepper

Method
 

  1. Let the edamame sit out 5 to 10 minutes while the air fryer preheats to 390°F. Toss with the oil, salt, garlic powder, paprika, and pepper, coating every pod.
  2. Cook in a single layer 8 to 10 minutes, shaking halfway, until blistered and charred at the edges. Add 2 to 3 minutes if still soft.
  3. Hit them with another pinch of salt and a squeeze of lemon the moment they come out.
  4. Whisk the ranch ingredients, thinning with a splash of water if needed, and chill 10 minutes.

Notes

Eat the pods edamame-style — squeeze the beans out, don't eat the shell.
Don't overcrowd and use enough oil, or you get dusty spices and no char.
Season the second they come out so the salt clings.
