Ingredients

  • 1 lb boneless skinless salmon cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tbsp honey or mirin
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/4 tsp fresh ginger grated, optional
  • 1 garlic clove minced, optional
  • sesame seeds and sliced green onions to garnish

Equipment

  • Air fryer
  • Small bowl
  • Whisk
  • Paper towels

Method

  1. Whisk the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic.
  2. Pat the salmon dry and toss with half the glaze.
  3. Arrange in a single layer and cook at 400°F (205°C) for 6 to 8 minutes, flipping halfway.
  4. Toss with the remaining glaze in the last 2 minutes, then garnish.

Notes

Glaze in two stages so it caramelises on the fish rather than pooling in the basket.
Make ahead: marinate up to a day, then cook fresh.
