Air Fryer Stuffed Salmon (Spinach and Cream Cheese)

Salmon fillets pocketed and filled with a garlicky spinach and cream cheese mixture, air fried until flaky with a creamy centre.

Ingredients
  

For the salmon
  • 4 fillets salmon 6 to 8 oz each, skinless
  • 1 tbsp olive oil
  • kosher salt and black pepper
For the filling
  • 4 oz cream cheese softened
  • 1 cup spinach wilted and squeezed dry, chopped
  • 1 garlic clove minced
  • 1 tsp lemon zest
  • 2 tbsp grated Parmesan
  • kosher salt and black pepper

Equipment

  • Air fryer
  • Mixing bowl
  • Sharp knife
  • Paper towels

Method
 

  1. Mix the cream cheese, spinach, garlic, lemon zest, Parmesan, salt, and pepper.
  2. Cut a horizontal pocket in each fillet, almost through. Season inside and out.
  3. Spoon the filling into each pocket and press closed; secure with a toothpick if needed.
  4. Brush with oil. Preheat the air fryer to 375°F (190°C) and cook 11 to 13 minutes, until the salmon flakes.

Notes

Squeeze the spinach hard: wet spinach makes a runny filling.
375°F gives the filling time to warm through before the fish overcooks.
Make ahead: assemble up to a day in advance.
