- Pat the salmon cubes dry and season lightly with salt.
- Whisk the glaze ingredients. Whisk in the cornstarch for a thicker coat.
- Toss the salmon with the oil and arrange in a single layer, not crowded.
- Cook at 400°F (204°C) for 6 to 8 minutes, flipping halfway.
- Toss or brush with the glaze during the last 2 minutes so it caramelises.
- Garnish with sesame seeds and scallions.
Notes
Dry surface: pat the cubes dry so the glaze lacquers rather than steams.
Cornstarch slurry: a light one makes the finish noticeably shinier and helps it cling.
Marinate option: 15 minutes in the glaze before cooking deepens the flavour without hurting texture.
Salt late: the glaze concentrates as it cooks, so season the fish lightly and adjust at the end.
