Method
- Toss the slices with 1 tsp salt in a colander and rest 10 minutes over the sink.
- Rinse quickly under cold water, shake dry, spread on a towel, and press firmly with another towel until dry to the touch.
- Toss with the oil, then the smoked paprika, garlic powder, remaining salt, and pepper until every slice looks red.
- Preheat to 375°F for 3 minutes. Load in a loose single layer and cook 6 minutes, then shake and cook 3 to 5 minutes more, watching from minute 3, until the edges brown and curl.
- Move to a wire rack for 2 minutes; carryover heat firms them.
Notes
Pre-salt draws the water out; the rinse takes off the sharp bite and excess salt.
A hot start prevents steaming.
Salt and vinegar version: toss finished chips with malt vinegar powder, never liquid vinegar.
