Preheat the air fryer: Set to 400°F (200°C) and let it heat for 3 minutes.
A preheated basket helps the shrimp cook quickly and evenly.
Make the scampi mixture: In a bowl, whisk together melted butter, olive oil, garlic, lemon zest, lemon juice, red pepper flakes, salt, pepper, and white wine if using.
Pat the shrimp dry: Use paper towels to remove excess moisture. Dry shrimp sear better and don’t steam.
Toss to coat: Add shrimp and parsley to the bowl and toss until evenly coated.
Arrange in the basket: Place shrimp in a single layer in the air fryer basket. It’s okay if they touch slightly, but avoid stacking. Work in batches if needed.
Air fry: Cook for 5–7 minutes at 400°F (200°C), flipping the shrimp halfway.
Shrimp are done when they’re pink, opaque, and just curled into a loose “C.”
Collect the sauce: Carefully pour any buttery juices from the basket into a bowl. Toss the hot shrimp in the sauce for extra flavor.
Serve: Spoon over pasta, rice, or alongside crusty bread. Add a squeeze of lemon and a sprinkle of parsley. Serve immediately for best texture.
