Salmon brushed with a light sesame-soy glaze, pressed into sesame seeds, and air fried so the crust stays crisp while the fish stays moist.

Ingredients
  

  • 4 fillets salmon 6 oz each, skin-on
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1/4 cup sesame seeds white and black
  • kosher salt and black pepper
  • sliced scallions to garnish

Method
 

  1. Whisk the soy sauce, honey, sesame oil, and rice vinegar.
  2. Pat the fillets dry, season lightly, brush with the glaze, then press the top of each fillet into the sesame seeds.
  3. Preheat the air fryer to 390°F (198°C) for 3 minutes.
  4. Cook skin-side down 8 to 10 minutes, until the crust is set and the fish flakes.
  5. Rest 2 minutes and scatter scallions.

Notes

Press the seeds on before the heat hits so they stay put.
390°F, not 400: sesame seeds scorch fast at the higher setting.
