Air Fryer Scrambled Eggs With Bacon and Feta – A Quick, Protein-Packed Breakfast

Ingredients
  

  • 4 large eggs
  • 3 slices bacon, chopped
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons milk or half-and-half (optional, for creamier eggs)
  • 1 tablespoon unsalted butter or 1 teaspoon olive oil
  • 1 tablespoon chopped chives or green onions (optional)
  • 1/8 teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Salt, to taste (go light—feta and bacon are salty)
  • Nonstick spray

Method
 

  1. Preheat the air fryer. Set to 350°F (175°C) for 3–5 minutes. Preheating helps the eggs set faster and more evenly.
  2. Cook the bacon. Place chopped bacon in your oven-safe dish. Air fry for 5–7 minutes, stirring once, until crisp. Remove the dish carefully and drain excess fat, leaving about 1–2 teaspoons for flavor.
  3. Whisk the eggs. In a bowl, whisk eggs with milk or half-and-half, pepper, and garlic powder if using. Add just a pinch of salt. Whisk until the mixture looks smooth and slightly frothy.
  4. Grease the dish. Lightly coat the warm dish with nonstick spray, then add butter or drizzle in oil. This keeps the eggs tender and prevents sticking.
  5. Combine. Pour the egg mixture into the dish. Sprinkle in the crisp bacon and half of the feta. Give it a quick, gentle stir to distribute.
  6. First cook. Air fry at 300°F (150°C) for 4 minutes. Lower heat helps prevent rubbery eggs and gives a soft texture.
  7. Stir. Open the air fryer, gently stir the eggs from the edges toward the center. This creates curds and helps them cook evenly.
  8. Second cook. Air fry for another 2–4 minutes, stirring once if needed, until the eggs are just set but still glossy. Cooking time varies by dish depth and air fryer model.
  9. Finish. Sprinkle remaining feta and chives on top. The residual heat will soften the feta. Taste and adjust seasoning.
  10. Serve immediately. Soft, silky eggs are best right away. Pair with toast, a tortilla, or avocado.
