Thick-cut salmon cubed, rubbed, air fried, then tossed in a barbecue glaze and blasted again for sticky, caramelised edges.

Ingredients
  

For the salmon
  • 1.5 lb salmon 1.5 to 2 inches thick, cut into 1.5-inch cubes
  • 1 tbsp neutral oil
  • 1 tbsp brown sugar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
For the glaze
  • 1/3 cup barbecue sauce
  • 1 tbsp honey
  • 1 tsp hot sauce optional

Equipment

  • Air fryer
  • Mixing bowl
  • Paper towels

Method
 

  1. Toss the salmon cubes with oil, then the brown sugar, smoked paprika, garlic powder, salt, and pepper.
  2. Preheat the air fryer to 380°F (193°C). Cook in a single layer 8 to 10 minutes, turning once.
  3. Toss the cubes with the barbecue sauce and honey.
  4. Return to the air fryer at 400°F for 3 to 4 minutes, until sticky and charred at the edges. Serve hot or at room temperature.

Notes

Thick cut only: 1.5 to 2 inch pieces hold their shape through the glazing.
Two-stage cook: render first at 380°F, then caramelise the glaze at 400°F.
