Ingredients
  

For the bowl
  • 4 fillets skinless salmon 4 to 6 oz each
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 3 cups cooked grains rice, quinoa, or farro
  • 3 cups toppings cucumber, avocado, shredded cabbage, cherry tomatoes
For the yogurt sauce
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove grated
  • 2 tbsp chopped herbs
  • kosher salt

Equipment

  • Air fryer
  • Small bowl
  • Paper towels

Method
 

  1. Pat the fillets dry and rub with oil, garlic powder, paprika, salt, and pepper.
  2. Preheat the air fryer to 400°F (205°C). Cook 8 to 10 minutes, until the salmon flakes.
  3. Whisk the yogurt, lemon juice, garlic, herbs, and salt.
  4. Divide the grains among bowls, add the toppings, flake the salmon over, and drizzle with sauce.

Notes

Prep components ahead: salmon and toppings keep a day, separate.
Warm grains, cold toppings for contrast.
