Air Fryer Salmon and Swiss Chard

Salmon air fried to a caramelised edge while Swiss chard wilts with garlic and lemon for a complete plate in about 20 minutes.

Ingredients
  

For the salmon
  • 2 fillets salmon 6 to 8 oz each
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • kosher salt and black pepper
For the chard
  • 8 cups Swiss chard stems removed, chopped
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • kosher salt
  • lemon juice to finish

Equipment

  • Air fryer
  • Meat thermometer
  • Paper towels

Method
 

  1. Pat dry and rub with oil, lemon zest, salt, and pepper.
  2. Preheat the air fryer to 400°F (205°C). Cook the fillets skin-side down 8 to 10 minutes, until they flake.
  3. Toss the chard with oil, garlic, and salt. Air fry 3 to 5 minutes, or sauté in a pan, until just wilted.
  4. Set the salmon over the chard and finish with a squeeze of lemon.

Notes

Chard cooks fast: pull it while the stems still have a little bite.
Prep ahead: wash and chop the chard and portion the salmon up to a day in advance.
