Air Fryer Salmon and Brussels Sprouts

Brussels sprouts get a head start to caramelise, then salmon joins the basket to finish, for a one-appliance dinner in under 25 minutes.

Ingredients
  

  • 2 fillets salmon 6 to 8 oz each
  • 12-16 small Brussels sprouts trimmed and halved
  • 1-2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp lemon zest
  • kosher salt and black pepper
  • lemon wedges to serve

Method
 

  1. Toss the sprouts with oil and salt. Preheat the air fryer to 400°F (205°C) and cook them 8 minutes, shaking once.
  2. Pat the fillets dry and season with garlic powder, paprika, lemon zest, salt, and pepper.
  3. Nestle the fillets among the sprouts and cook 8 to 10 minutes more, until the sprouts are caramelised and the salmon flakes.
  4. Finish with a squeeze of lemon.

Notes

Sprouts first: they need longer than the fish, so give them a head start.
Cut sprouts evenly so they cook at the same rate; halve any large ones again.
