Ingredients
  

  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons sweet paprika
  • 1½ teaspoons ground ginger
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground allspice
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½–1 teaspoon cayenne pepper (to taste)
  • 1 teaspoon kosher salt (optional; you can also add salt when cooking)
  • 1 teaspoon sugar or coconut sugar (optional, for balance)
  • 1 teaspoon dried rose petals, finely crushed (optional but traditional in some versions)

Method
 

  1. Preheat the air fryer: Set it to 300°F (150°C). A lower temperature helps prevent scorching delicate spices.
  2. Combine the spices: In a small bowl, mix all the ground spices until evenly blended. Break up any clumps with the back of a spoon.
  3. Toast briefly: Line the air fryer basket or tray with a small piece of foil or parchment rated for air fryers. Spread the spice mix in a thin, even layer.
  4. Air fry 3–5 minutes: Heat until the spices are fragrant. Shake the basket halfway through. Start checking at 3 minutes—spices can burn quickly.
  5. Cool completely: Transfer the toasted blend to a plate and let it cool. This prevents residual heat from dulling the flavors.
  6. Store: Move the cooled spice mix to an airtight jar. Label with the date so you remember when you made it.
