Thin radish slices salt-drained and air fried into peppery crisp chips, served with an icy lemon-dill tzatziki.

Ingredients
  

For the chips
  • 1-1.5 lb radishes any kind, sliced thin and even
  • 1-2 tbsp olive oil
  • 1 tsp lemon zest
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika optional
  • kosher salt and black pepper
For the lemon-dill tzatziki
  • 1 cup full-fat Greek yogurt
  • 1/3 cup cucumber finely grated and squeezed dry
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh dill chopped
  • 1 small garlic clove microplaned
  • 1 tbsp olive oil
  • salt a pinch

Equipment

  • Air fryer
  • Mandoline
  • Wire rack

Method
 

  1. Slice the radishes thin, salt lightly, rest 10 minutes, then blot dry.
  2. Toss with the oil, lemon zest, garlic powder, paprika, salt, and pepper.
  3. Preheat to 350°F. Cook in a single layer 8 to 12 minutes, flipping halfway, until the edges brown and the centres look dry. Pull faster-browning pieces early.
  4. Cool on a wire rack. Stir the tzatziki ingredients and chill; serve cold with the crisp chips.

Notes

Salt and blot the radishes — dry slices are the only way to crisp chips.
Radishes shrink a lot; slice more than you think you need.
Cold dip, warm chips.
