Air Fryer Pretzel Bites with Pastel Yogurt Dip

Homemade pretzel bites given a baking-soda bath and air fried golden, served with a sweet, lemon-brightened pastel yogurt dip.

Ingredients
  

For the pretzel bites
  • 1.5 cups warm water about 110°F
  • 2.25 tsp active dry yeast
  • 1 tbsp brown sugar
  • 4-4.5 cups all-purpose flour
  • 2 tsp kosher salt
  • 4 tbsp unsalted butter melted
  • 1/2 cup baking soda for the bath
  • 8 cups water for boiling
  • 1 egg beaten with 1 tbsp water
  • coarse salt
For the pastel yogurt dip
  • 1 cup thick Greek yogurt
  • 2-3 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • salt a pinch
  • 1/2 tsp lemon zest
  • pastel gel food colouring

Equipment

  • Air fryer
  • Large pot
  • Slotted spoon
  • Small bowls

Method
 

  1. Stir the yeast and brown sugar into the warm water and rest 5 minutes until foamy. Add the flour, salt, and melted butter and knead into a smooth dough. Rest 20 minutes.
  2. Roll into ropes and cut into 1-inch bites. Bring the water to a boil, add the baking soda, and boil the bites 20 to 30 seconds in batches. Drain.
  3. Brush with egg wash and sprinkle with coarse salt. Air fry at 380°F for 8 to 10 minutes, until deep golden.
  4. Divide the yogurt, stir in the honey, vanilla, salt, and lemon zest, and tint each bowl a pastel shade.

Notes

The baking-soda bath is what gives pretzels their colour and chew — don't skip it.
Boil in small batches so the bites don't stick together.
A dot of gel colour goes a long way.
