Ingredients
  

  • 4 bone-in pork chops 3/4 to 1 inch thick
  • 1 tbsp olive or avocado oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp brown sugar optional, for browning

Method
 

  1. Pat the chops dry. Rub with the oil, then the combined spices. Rest 10 minutes while the air fryer preheats to 400°F.
  2. Cook in a single layer 6 minutes, flip, then 4 to 7 minutes more, to 140 to 145°F in the thickest part away from the bone.
  3. Rest 5 minutes tented with foil; the temperature climbs to 145 to 150°F.

Notes

Pull at 140 to 145°F and rest — that's the line between juicy and dry.
Pat dry and preheat for a real crust.
Thin chops (1/2 inch) cook in about 8 minutes total; check early.
