Ingredients

For the pineapple wedges
  • 1 medium pineapple peeled, cored, cut into 1-inch wedges
  • 1.5-2 tbsp jerk seasoning
  • 1 tbsp brown sugar
  • 1-2 tsp neutral oil
  • 1 lime zested and juiced
  • cilantro or mint chopped, to garnish
For the coconut rum dip
  • 1/2 cup coconut cream chilled
  • 1/4 cup Greek yogurt or sour cream
  • 1-2 tbsp dark or spiced rum or pineapple juice
  • 1-2 tsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • salt a pinch
  • toasted coconut flakes to garnish

Equipment

  • Air fryer
  • Small bowl

Method

  1. Combine the jerk seasoning, brown sugar, oil, and lime zest. Toss the pineapple wedges to coat and rest 10 to 15 minutes.
  2. Preheat to 390°F. Cook in a single layer 8 to 10 minutes, flipping halfway, until caramelised at the edges.
  3. Whisk the coconut cream, yogurt, rum, honey, vanilla, and salt smooth. Chill 10 minutes, then top with toasted coconut.
  4. Squeeze lime over the hot wedges, garnish with herbs, and serve with the dip.

Notes

Pat the pineapple dry so the seasoning sticks.
If your jerk blend is salty, skip extra salt.
Chill the coconut cream first so the dip sets.
