- Preheat the air fryer to 380°F. Toss the ham cubes with a little oil and cook in a single layer 8 to 12 minutes, shaking twice, until the edges catch.
- Simmer the pineapple juice, brown sugar, honey, Dijon, soy sauce, vinegar, ginger, garlic, and pepper flakes 3 to 4 minutes. Whisk in the cornstarch slurry and cook until glossy and thick enough to coat a spoon.
- Toss the hot ham cubes in the glaze.
- Skewer with toothpicks and garnish with parsley or chives.
Notes
The ham is already cooked — you're crisping the edges and glazing, nothing more.
Thicken the glaze properly so it clings instead of pooling.
If your ham is salty, lean on the vinegar and skip any added salt.
