- Whisk the peanut butter powder, flour, sugar, salt, and baking powder. Separately whisk the egg, milk, oil, and vanilla, then combine into a soft dough. Adjust with a teaspoon of flour or a splash of milk.
- Chill 10 minutes, then roll between two sheets of parchment to 1/16 to 1/8 inch. Cut into 1.5 to 2-inch rounds and dock with a fork.
- Preheat to 325°F. Cook in a single layer 5 to 8 minutes, until golden. Test one first for timing. Cool completely — they crisp as they cool.
- Warm the cream, pour over the chocolate, rest 2 minutes, and stir smooth with the salt.
Notes
Go light on oil — too much makes them soft rather than crisp.
Thinner is crispier.
