Air Fryer Parmesan Potato Bites

Halved baby potatoes tossed with cornstarch, spices, and Parmesan and air fried cut-side down to a deeply golden, crisp crust that stays crisp for a potluck.

Ingredients
  

  • 1.5-2 lb baby potatoes gold or red, halved
  • 2-3 tbsp olive oil
  • 3/4 cup freshly grated Parmesan plus more to finish
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • kosher salt and black pepper
  • 2 tsp cornstarch
  • chopped parsley or chives to garnish

Method
 

  1. Halve the potatoes to marble-to-walnut size. Soak in cold water 10 to 15 minutes, then drain and pat very dry.
  2. Toss with the oil first, then the cornstarch, spices, salt, and pepper. Add the Parmesan last so it clings.
  3. Preheat the air fryer to 390 to 400°F for 3 to 5 minutes.
  4. Arrange cut-side down in a single layer with room between them. Cook 10 minutes, flip, then 6 to 10 minutes more until deeply golden. Add a little more Parmesan in the last 2 minutes.

Notes

Cut-side down is where the crust forms.
Freshly grated Parmesan crusts; pre-grated stays powdery.
Everything bagel seasoning goes on near the end so it doesn't burn.
