Ingredients
  

For the okra chips
  • 1 lb fresh okra caps and tails trimmed, sliced into 1/4-inch coins
  • 1-2 tsp cornstarch or rice flour
  • 1-1.5 tbsp neutral oil
For the Cajun ranch blend
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried dill
  • 1/4-1/2 tsp cayenne
  • 1/2 tsp fine kosher salt
  • 1/4 tsp black pepper
  • 1 tsp nutritional yeast optional

Method
 

  1. Spread the okra coins on a towel and press dry, then let them air out 5 to 10 minutes.
  2. Toss with the cornstarch, then the oil, then 1 to 1.5 tbsp of the Cajun ranch blend until every piece glistens.
  3. Preheat to 390°F. Spread in a loose single layer and cook 10 to 14 minutes, shaking every 4 minutes, until deep golden and crisp.
  4. Serve with buttermilk ranch and hot sauce, or a yogurt-lime-cilantro sauce.

Notes

Dry the coins thoroughly — this is the anti-slime step.
Loose single layer, shaken often.
The starch dust creates the micro-crust that seals in the crunch.
