Ingredients
  

For the tots
  • 1 bag frozen tater tots 28 to 32 oz
  • 1-2 tsp Naga Jolokia (ghost pepper) powder start with 1
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1 tbsp neutral oil or spray oil
For the mango habanero salsa
  • 2 ripe mangoes diced small
  • 1-2 habaneros seeded and minced very fine
  • 1/2 small red onion minced
  • 1/2 red bell pepper diced
  • 1/4 cup cilantro chopped
  • 2 limes juiced
  • 1 lime zested, optional
  • 1 tsp honey or agave optional
  • 1/2 tsp kosher salt

Method
 

  1. Toss the frozen tots with the oil, then the ghost pepper powder, smoked paprika, garlic powder, onion powder, and salt.
  2. Preheat to 400°F. Cook in a single layer 14 to 18 minutes, shaking twice, until deep golden and extra crisp.
  3. Mix the salsa ingredients and let it sit 10 minutes.
  4. Pile the tots and top with the salsa, plus cotija, scallions, or crema if you like.

Notes

Start with 1 teaspoon ghost pepper powder — you can't un-ghost the tots.
Gloves for the peppers, and open a window.
The mango salsa is the counterweight — make it fruity and bright.
