Air Fryer Naan Bread

A quick yogurt dough — no long rise — shaped and air fried to soft, chewy, lightly charred flatbreads, brushed with garlic butter.

Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup plain yogurt full-fat
  • 1/4-1/3 cup warm water as needed
  • 1 tsp instant yeast
  • 2 tsp sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbsp oil plus more for brushing
  • butter or ghee for brushing after cooking
  • minced garlic, cilantro, or nigella seeds optional

Method
 

  1. Combine the flour, salt, baking powder, and yeast. Add the yogurt, oil, and sugar, then enough warm water to bring it into a soft, slightly tacky dough. Knead briefly and rest 30 to 45 minutes.
  2. Divide into 6 pieces and roll each into a teardrop about 1/4 inch thick.
  3. Preheat to 375°F. Cook one or two at a time 3 to 4 minutes per side, until puffed with charred spots.
  4. Brush the hot naan with butter or garlic butter and scatter with herbs.

Notes

Soft, slightly tacky dough makes tender naan; a stiff dough bakes up dense.
Roll to 1/4 inch so it puffs.
Brush with butter straight out for that restaurant finish.
