Salmon lacquered with a white miso, soy, and mirin glaze that caramelises in a hot air fryer in under 15 minutes, no turning needed.

Ingredients
  

  • 4 fillets salmon about 6 oz each, skin-on
  • 2 tbsp white miso
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil
  • garlic a pinch, grated
  • chili flakes a pinch, optional
  • sesame seeds and sliced scallions to garnish

  • Small bowl

Method
 

  1. Pat the fillets dry. Excess moisture steams instead of caramelising.
  2. Whisk the miso, soy sauce, rice vinegar, honey, sesame oil, and grated garlic.
  3. Brush the glaze over all sides and reserve a spoonful. Shake off any excess before cooking.
  4. Preheat the air fryer to 400°F (200°C). Cook 8 to 10 minutes, until the glaze is glossy and the fish flakes.
  5. Brush with the reserved glaze, return 1 to 2 minutes, then garnish.

Notes

Shake off excess marinade: a thick pool steams rather than lacquers.
No extra salt: miso and soy already carry it.
