Wonton wrappers brushed with butter, dusted in a matcha-sugar blend, and air fried into snappy sweet crisps, served with a white chocolate ganache.

Ingredients
  

For the crisps
  • 24 wonton wrappers
  • neutral oil spray or melted butter
  • 2 tbsp granulated sugar
  • 1-1.5 tsp matcha powder culinary grade, sifted
  • fine salt a pinch
For the white chocolate dip
  • 6 oz white chocolate chopped
  • 1/2 cup heavy cream
  • salt a pinch
  • vanilla paste optional

Equipment

  • Air fryer
  • Pastry brush
  • Small saucepan

Method
 

  1. Combine the sugar, sifted matcha, and salt. Taste and adjust.
  2. Keep the wrappers under a damp towel. Brush or spray both sides lightly with butter and dust one side generously with the matcha sugar, pressing gently.
  3. Preheat to 320°F. Cook in a single layer 4 to 6 minutes, flipping halfway, until golden and crisp. Watch closely at the end.
  4. Heat the cream until steaming, pour over the white chocolate, rest 2 minutes, then stir smooth with the salt. Loosen with more warm cream if thick.

Notes

Sift the matcha or it clumps into bitter green spots.
320°F, low and slow — sugar-dusted wrappers scorch fast at higher heat.
Cut wrappers into triangles before dusting if you want chip shapes.
