Salmon glazed with a maple-flavoured, sugar-free glaze sharpened with Dijon and tamari, air fried to a glossy finish in under 20 minutes.

Ingredients
  

  • 4 fillets salmon about 6 oz each, skin-on
  • 2 tbsp sugar-free maple syrup or 1 tsp maple extract with 1 tbsp water and granular sweetener
  • 1 tbsp Dijon mustard
  • 1 tbsp tamari or soy sauce
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • kosher salt and black pepper

  • Small bowl
  • Whisk
  • Meat thermometer
  • Paper towels

Method
 

  1. Whisk the sugar-free maple syrup, Dijon, tamari, lemon juice, and olive oil.
  2. Pat the fillets completely dry and season with salt and pepper.
  3. Preheat the air fryer to 400°F (205°C) for 3 minutes.
  4. Arrange the fillets skin-side down in a single layer. Cook 8 to 10 minutes, brushing on half the glaze at the halfway point.
  5. Brush with the remaining glaze in the last minute, then rest 2 minutes. Garnish and serve.

Notes

Maple flavour, not real syrup: real maple syrup is sugar. A sugar-free syrup or maple extract keeps the glaze true to name.
Two thin coats with a rest between set better than one heavy one.
