Ingredients
  

  • 1-1.5 lb rainbow carrots peeled, halved or quartered to finger-width
  • 1.5 tbsp olive oil
  • 1 tbsp melted butter or ghee
  • 2-3 tbsp pure maple syrup
  • 1 tsp apple cider vinegar or lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder optional
  • chopped parsley or toasted nuts to garnish

Method
 

  1. Preheat the air fryer to 380°F. Pat the carrots dry and toss with the oil, butter, maple syrup, vinegar, salt, pepper, and garlic powder.
  2. Preheat the air fryer to 380°F (193°C) for 3 minutes.
  3. Arrange in a single layer and cook 10 to 14 minutes, shaking or flipping halfway, until caramelised at the edges and tender.
  4. Garnish with parsley or toasted pistachios and a squeeze more acid if it tastes too sweet.

Notes

Pat the carrots dry — moisture fights caramelisation.
The splash of vinegar keeps the glaze from being cloying.
Brown-butter variation: brown the butter first for a nutty depth.
