Air Fryer Maple Glazed Carrots for a Crowd

Carrot sticks or coins air fried in batches, held warm, and tossed all together in a warm maple-butter glaze right before serving.

Ingredients
  

  • 1.5 lb carrots peeled, cut into 1/2-inch sticks or coins
  • 2 tbsp maple syrup
  • 1.5 tbsp melted butter or olive oil
  • 1 tsp apple cider vinegar or lemon juice
  • 1/2 tsp kosher salt plus more to finish
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon optional
  • smoked paprika or cayenne a pinch, optional
  • chopped thyme or parsley, flaky salt to garnish

Method
 

  1. Preheat the air fryer to 390°F. Toss the carrots lightly with a little of the oil and salt. Air fry 1 to 1.5 lb at a time in a single layer 10 to 14 minutes, shaking halfway. Hold finished batches on a sheet pan in a 200°F oven.
  2. Whisk the maple syrup, butter, vinegar, salt, pepper, cinnamon, and paprika and warm briefly.
  3. Right before serving, toss all the carrots together in a big bowl with the warm glaze. Finish with herbs and flaky salt.

Notes

Glaze at the very end, all together, so nothing dries out on the holding pan.
Real maple syrup caramelises; pancake syrup just gets sticky.
The splash of acid keeps a crowd-size batch from tasting one-note sweet.
