Ingredients
  

  • 1-1.5 lb carrots peeled, cut into 1/2-inch coins or batons
  • 1.5 tbsp melted butter or neutral oil
  • 1.5 tbsp maple syrup or honey
  • 1 tbsp brown sugar optional
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cinnamon or ginger optional
  • 1 tsp Dijon mustard optional
  • 1/2 orange zested, plus 1 tsp juice, optional

Method
 

  1. Preheat the air fryer to 390 to 400°F. Toss the carrots with the butter, maple syrup, brown sugar, salt, pepper, and any extras.
  2. Preheat the air fryer to 390 to 400°F for 3 minutes.
  3. Arrange in a single layer and cook 10 to 14 minutes, shaking or flipping halfway, until caramelised at the edges and tender.
  4. Taste, adjust the salt, and finish with a tiny pat of butter or a splash of orange juice.

Notes

Coins cook fastest and most evenly; batons keep more bite.
Shake every 4 to 5 minutes so the glaze doesn't scorch on one side.
Maple-Dijon is the classic pairing for ham.
