Ingredients
  

  • 1 block halloumi 8 to 9 oz, patted dry and sliced 1/2 inch
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cinnamon
  • 1/4-1/2 tsp cayenne
  • 3/4 tsp fine salt
  • 1/2 tsp black pepper

  • Air fryer
  • Small bowl
  • Perforated liner

Method
 

  1. Preheat the air fryer to 390°F (200°C) for 4 minutes with the empty basket.
  2. Pat the halloumi dry and slice 1/2 inch. Toss with the oil and lemon juice, then coat with a heaped tablespoon of the combined spice blend.
  3. Lay the pieces in a single layer with a fingertip of space, on a lightly oiled basket or perforated liner. Cook 6 to 8 minutes, flipping at 4, until the edges are deep golden with tiny blisters.
  4. Rest 1 minute on a rack so the steam escapes.

Notes

1/2-inch slices — thinner turns rubbery-squeaky.
Pat dry and preheat or the surface stays pale and wet.
Serve with a garlic yogurt sauce, chopped salad, and quick-pickled onions.
