- Pat the beans very dry — press, don't crush.
- Toss the beans with the oil, then the beaten egg. Combine the almond flour, chopped almonds, Parmesan, garlic powder, paprika, salt, and pepper. Toss handfuls of beans in the crust, pressing gently so it clings in a thin layer, then shake off the excess.
- Preheat to 380°F. Cook 6 minutes, shake or flip, then 3 to 5 minutes more until the almonds are deep golden and the beans bend but still snap.
- Add lemon zest and pepper flakes if using.
Notes
Water beading on the beans means they need more drying — pat, don't press.
Thin, even layer, not clumps.
Chopped almonds plus almond flour gives both crunch and coverage.
