- Pat the wings bone-dry. Toss with the baking powder, garlic powder, onion powder, and pepper, then chill uncovered 30 to 60 minutes.
- Preheat the air fryer to 380°F (193°C) for 3 to 5 minutes.
- Toss the wings with the oil. Arrange in a single layer with space and cook 24 to 28 minutes total, flipping at 12 to 14, until golden with rendered fat.
- Raise to 400°F for 4 to 6 minutes.
- Toss the hot wings with the truffle salt and rosemary.
