- Cut the cabbage into even, non-feathery pieces and dry it thoroughly — if a towel comes away damp, keep drying.
- Toss hard with the oil first to coat every piece, then add the Old Bay last so it sticks evenly.
- Preheat to 375°F. Spread in a single layer, no overloading. Cook 3 minutes without stirring to set the colour, toss, then check again at 6. If the pieces are flexible, go 1 to 3 minutes more.
- Rest 2 minutes in the basket, then move to a rack.
Notes
Even pieces — tissue-thin bits scorch, chunky slaw bits steam.
Oil first, seasoning last.
A wet bottom after cooking means you overloaded the basket.
