Ingredients

For the cups
  • 24 wonton wrappers or pre-made phyllo cups
  • oil spray
For the filling
  • 8 oz cream cheese softened
  • 1/3 cup mayonnaise or sour cream
  • 1 cup shredded sharp cheddar
  • 1/2 cup shredded pepper jack
  • 2-3 fresh jalapeños seeded and finely diced, or 1/3 cup pickled, blotted
  • 2 garlic cloves minced
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/3 cup cooked crumbled bacon optional
  • salt and pepper
For the topping
  • 1/3 cup panko or crushed pork rinds

Equipment

  • Air fryer
  • Mini muffin tin
  • Mixing bowl

Method

  1. Preheat the air fryer to 350°F and oil a mini muffin tin. Press a wonton wrapper into each cup and mist with oil. Blind-bake 3 to 4 minutes to set a crisp barrier.
  2. Beat the cream cheese and mayo smooth, then fold in the cheeses, jalapeños, garlic, spices, and bacon.
  3. Fill each cup nearly to the rim and sprinkle with panko.
  4. Cook 8 to 12 minutes until the edges are deep golden and the filling bubbles. Cool 5 minutes, then lift out.

Notes

Pre-bake the cups — it's the barrier that keeps the filling from making them soggy.
Shredded cheese for structure so the filling sets instead of running.
Blot the jalapeños, fresh or pickled.
