Ingredients

  • 4 fillets salmon about 6 oz each, skin-on
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • kosher salt and black pepper
  • chili flakes a pinch, optional
  • 1 tsp sesame seeds to garnish
  • green onions sliced, to garnish

Equipment

  • Air fryer
  • Small bowl
  • Whisk
  • Meat thermometer
  • Paper towels

Method

  1. Whisk the soy sauce, honey, rice vinegar, and sesame oil.
  2. Pat the fillets completely dry and season with salt and pepper.
  3. Preheat the air fryer to 400°F (205°C) for 3 minutes.
  4. Arrange the fillets skin-side down in a single layer. Cook 8 to 10 minutes, brushing on half the glaze at the halfway point.
  5. Brush with the remaining glaze in the last minute, then rest 2 minutes. Garnish and serve.

Notes

Glaze halfway, not at the start: honey burns over a full cook. Brushing at the midpoint and again at the end builds a lacquer instead of a scorch.
Extra for serving: double the glaze if you want some to spoon over rice.
