Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings: 6 servings

Ingredients

  • Honey (mild clover or wildflower)
  • Dijon mustard
  • Yellow mustard (adds classic tang and color)
  • Apple cider vinegar (or white wine vinegar)
  • Olive oil (or neutral oil)
  • Greek yogurt (optional for creaminess)
  • Garlic, finely minced or grated
  • Onion powder (or very finely grated shallot)
  • Smoked paprika (optional but great)
  • Kosher salt and black pepper
  • Fresh lemon (zest and juice, optional for brightness)

Method

  1. Prep a heat-safe dish: Use a small, oven-safe ramekin or metal bowl that fits your air fryer basket. Line the basket with foil for easy cleanup, if you like.
  2. Combine base ingredients: Add 3 tablespoons honey, 2 tablespoons Dijon, 1 tablespoon yellow mustard, 1 tablespoon apple cider vinegar, 2 tablespoons olive oil, 1 small grated garlic clove, 1/4 teaspoon onion powder, a pinch of smoked paprika, 1/4 teaspoon salt, and a few grinds of pepper to the dish. Stir well.
  3. Air fry gently: Place the dish in the basket and heat at 300°F (150°C) for 4–5 minutes. You’re warming, not boiling. The mixture should loosen and smell fragrant.
  4. Whisk to emulsify: Remove carefully, then whisk until glossy and smooth. If using Greek yogurt, whisk in 1–2 tablespoons now for a creamier dressing.
  5. Adjust to taste: Add a squeeze of lemon juice for brightness, more honey for sweetness, or more Dijon for extra tang. If it’s too thick, whisk in a splash of warm water.
  6. Let it set: Rest 5 minutes. The flavors settle and the texture becomes silky.
  7. Serve or store: Use right away on salads or as a dip, or transfer to a jar for later.
