Prep a heat-safe dish: Use a small, oven-safe ramekin or metal bowl that fits your air fryer basket. Line the basket with foil for easy cleanup, if you like.
Combine base ingredients: Add 3 tablespoons honey, 2 tablespoons Dijon, 1 tablespoon yellow mustard, 1 tablespoon apple cider vinegar, 2 tablespoons olive oil, 1 small grated garlic clove, 1/4 teaspoon onion powder, a pinch of smoked paprika, 1/4 teaspoon salt, and a few grinds of pepper to the dish.
Stir well.
Air fry gently: Place the dish in the basket and heat at 300°F (150°C) for 4–5 minutes. You’re warming, not boiling. The mixture should loosen and smell fragrant.
Whisk to emulsify: Remove carefully, then whisk until glossy and smooth.
If using Greek yogurt, whisk in 1–2 tablespoons now for a creamier dressing.
Adjust to taste: Add a squeeze of lemon juice for brightness, more honey for sweetness, or more Dijon for extra tang. If it’s too thick, whisk in a splash of warm water.
Let it set: Rest 5 minutes. The flavors settle and the texture becomes silky.
Serve or store: Use right away on salads or as a dip, or transfer to a jar for later.
