Ingredients
  

For the bites
  • 1 lb skinless salmon cut into 1-inch cubes
  • 1 tbsp cornstarch
  • 1 tsp neutral oil
  • kosher salt and black pepper
For the honey garlic glaze
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 3 garlic cloves minced
  • 1 tsp rice vinegar
  • 1/2 tsp smoked paprika or chili flakes

Equipment

  • Air fryer
  • Small bowl
  • Whisk
  • Paper towels

Method
 

  1. Whisk the honey, soy sauce, garlic, rice vinegar, and paprika.
  2. Pat the salmon cubes dry and season lightly with salt. Toss with half the glaze.
  3. Arrange in a single layer and cook at 400°F (205°C) for 6 to 8 minutes, flipping halfway.
  4. Toss with the remaining glaze in the last 2 minutes.
  5. Garnish and serve hot.

Notes

Cornstarch dusting is the trick for crisp edges that hold the glaze.
Glaze at the end so the honey and garlic caramelise on the fish, not in the basket.
