Air Fryer Honey Garlic Chicken Thighs

Bone-in thighs seasoned and air fried to crisp skin, then tossed in a thickened honey-garlic-soy glaze.

Ingredients
  

For the chicken
  • 6 bone-in skin-on chicken thighs about 2 to 2.5 lb
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
For the honey garlic glaze
  • 1/3 cup honey
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 4 garlic cloves finely minced
  • 1 tsp fresh ginger grated
  • 1 tsp toasted sesame oil
  • 1 tsp cornstarch mixed with 1 tsp water

Equipment

  • Air fryer
  • Small saucepan
  • Meat thermometer

Method
 

  1. Pat the thighs dry and season all over.
  2. Preheat to 380°F. Cook skin-side down 12 minutes, flip skin-side up, and cook 8 to 12 minutes more, to 175 to 185°F.
  3. Simmer the honey, soy sauce, rice vinegar, garlic, ginger, and sesame oil 2 minutes, then whisk in the cornstarch slurry until glossy.
  4. Toss or brush the thighs with the glaze and finish with sesame seeds, scallions, and lemon.

Notes

Skin-side down first renders the fat and crisps the skin.
Glaze after cooking so the honey doesn't scorch in the basket.
Thicken the glaze so it clings.
