Air Fryer Hoisin Salmon

Salmon fillets brushed with a hoisin, soy, and ginger glaze that caramelises fast in the air fryer for a glossy lacquer. Two light coats with a rest between beat one heavy one.

Ingredients
  

  • 3 fillets salmon 6 to 8 oz each, skinless
  • 6-9 tbsp hoisin sauce 2 to 3 tbsp per fillet
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar or mirin
  • 1 garlic clove minced
  • 1/2 tsp fresh ginger minced
  • 1/2 tsp sesame oil
  • kosher salt and black pepper
  • sesame seeds and thinly sliced green onions to finish

Method
 

  1. Whisk the hoisin, soy, rice vinegar, garlic, ginger, and sesame oil.
  2. Pat the salmon dry, season with salt and pepper, and brush with a thin layer of glaze.
  3. Preheat the air fryer to 400°F (200°C) for 2 to 3 minutes.
  4. Brush on a second thin coat and cook 7 to 10 minutes, until caramelised and just opaque.
  5. Optional 1 to 2 minute broil to deepen the colour. Finish with sesame and scallions.

Notes

Two light coats with a brief rest between beat one heavy coat that runs and turns sticky.
No flipping: salmon rarely needs turning in the air fryer.
Rest 1 minute after cooking to keep it moist but firm.
