Air Fryer Herb Crusted Salmon

Salmon fillets brushed with Dijon, pressed into a fresh herb and panko crust, and air fried until the crust is golden and the fish just flakes.

Ingredients
  

  • 4 fillets salmon about 6 oz each, skinless or skin-on
  • 1 tbsp Dijon mustard as a binder
  • 1/3 cup panko or finely chopped almonds
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 tbsp chives chopped
  • 1 tsp lemon zest
  • 2 tbsp butter or olive oil melted
  • kosher salt and black pepper

Equipment

  • Air fryer
  • Mixing bowl
  • Paper towels

Method
 

  1. Pat the fillets dry and season lightly with salt and pepper. Brush the tops with Dijon.
  2. Toss the panko, herbs, lemon zest, melted butter, salt, and pepper together.
  3. Press the crust firmly onto the Dijon-brushed side of each fillet.
  4. Preheat the air fryer to 380°F (193°C) for 3 minutes.
  5. Cook 8 to 10 minutes, until the crust is golden and the fish flakes. Rest 2 minutes before serving.

Notes

Press firmly: a loose crust falls off in the basket.
Toast the crumbs first in a dry pan for a deeper, nuttier crust.
Browning too fast? Drop to 375°F and add a minute.
