Servings: 4 servings

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • 1/3 cup grated Parmesan cheese (optional but recommended)
  • 1/2 cup all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (or sweet paprika)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • Olive oil spray or avocado oil spray
  • Optional dips: ranch, chipotle mayo, honey mustard, marinara, or lemon-garlic yogurt sauce

Method

  1. Prep the beans: Rinse the green beans and pat them dry. Trim the ends so the beans are clean and uniform. Dry beans help the coating stick.
  2. Set up three bowls: One with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir the breadcrumb mixture until evenly seasoned.
  3. Preheat the air fryer: Set it to 390°F (200°C) for 3 minutes. A hot basket helps the coating crisp up right away.
  4. Coat the beans: Toss a handful of green beans in flour, shake off the excess, dip into the egg, then roll in the breadcrumb mix. Press gently so the crumbs cling. Work in small batches to keep things tidy.
  5. Load the basket: Lightly spray the air fryer basket with oil. Arrange the coated beans in a single layer with slight space between them. Don’t overcrowd.
  6. Spray and cook: Mist the tops with oil. Air fry for 7–9 minutes, shaking the basket or flipping halfway. They’re done when they’re golden and crisp with a bit of snap.
  7. Season and serve: Sprinkle with a pinch of salt right out of the fryer. Serve hot with your dip of choice.
